How dorada is made with salt

INGREDIENTS (4 people):- 1.2 kg of gilthead with the "Breeding of Our Seas" seal, guarantee of quality and freshness
- 1 lemon
- Fresh parsley
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- Olive oil
- 2 kg of fat salt
- Aromatic

Make juice from a lemon and grate your skin. Clean, dry and finely chop the peppers. Peel and finely chop the onion. Put the peppers, onion and chopped parsley in a bowl. Add the lemon juice, its zest and abundant olive oil. Remove and reserve.

Preheat the oven to 200º C. Mix the fat salt with 1.5 dl of water and herbs in a bowl. Let stand a few minutes. Put a bed of salt on a baking sheet. Place the gilthead on top and cover it with the rest of the salt.

Bake 40 minutes; take. Cover with a dishcloth and break the salt crust carefully, giving it a few dry blows. With some cutlery, remove the skin and the loin that is on top; the central spine and, finally, the other loin. Serve with the pepper vinaigrette.
